What’s Cooking? Recipes for a tight budget

This week’s recipe comes from Bahia, Brazil where, along with the rest of Latin America, Portuguese, Spanish and African influences permeate the food and the culture. The ingredients in Moqueca vary according to region. It’s traditionally made with dendê oil, a bright, orange oil derived from the kernel of palm fruit which is a staple in Brazilian and West African cuisine.
